This is my big girls’ favorite lunch! Who doesn’t love a good sandwich? It’s flavorful, filling and healthy.

Ingredients
-1 15 oz can chickpeas – rinsed and drained
-¼ cup of roasted unsalted sunflower seeds
-3 tbs of vegan mayo
-½ tsp of dijon or spicy mustard
-1 tbs of agave nectar
-½ cup chopped red onion
-sea salt + pepper
-Vegan bread ( or you can use tortillas! )
-sliced avocado, onion and tomato for topping
-Garlic herb sauce to spread on sandwich bread:
-¼ cup hummus
-½ medium lemon juiced
-1 tsp of garlic powder
-water or dairy free milk to thin it out
-seat salt to taste
Cooking Directions
-Prepare garlic herb sauce and set aside
-Add chickpeas to a mixing bowl and -1 15 oz can chickpeas – rinsed and drained
-Lightly mash with a fork for texture. Then add sunflower seed, mayo, mustard, agave, red onion, salt, pepper and mix.
-Toast bread if desired and prepare any toppings
-Scoop filling on to the bread and top with the sauce and toppings.
