This is a great breakfast if you’re wanting a hearty meal that resembles scrambled eggs. It was a favorite of mine that I discovered soon after switching my diet to plant-based.

Ingredients
10 oz of Moroccon Tofu Cubes (Hodo brand )
Bell Peppers
Onion
Spinach
Shredded Cheese
Tomatoes
Avocados
Cooking Directions
Cook peppers and onions on stove in a skillet with avocado oil and salt + pepper
Add tofu and cook as directed
Add in spinach
Melt non-dairy cheese shreds on top ( I like the Dayia brand for melting )
Top with tomatoes and avocados
