I love being able to make a meal using just 1 skillet. I’ve been experimenting with different 1 skillet meals on the weekends. This is by far my favorite skillet meal! It’s filling, delicious and easy to make! The left-overs the next day were just as good!

Ingredients
- 3 medium potatoes
- 3/4 package of extra firm tofu crumbled
- 1/2 onion diced
- 1 1/2 cups shredded cheese
- 3-4 cups of fresh spinach
- 2 Tbs mustard
- 1/2 tsp turmeric
- 1 Tbs garlic powder
- 1/2 Tbs chili powder
- 1/2 Tbs paprika
- pink himalayan sea salt + pepper
Cooking Directions
- Preheat oven to 375. In a medium bowl add your crumbled tofu. Mix in the mustard and turmeric. Stir to combine.
- Slice the potatoes into small circles* The thinner the better. I used the circle slicer on my grater. ( see grater I have below from Amazon ).
- Put the potatoes in a large bowl and season with the remaining spices. Stir to combine and then add in your cooking spray ( I use avocado spray ) and mix together in your bowl.
- Heat a large oven-proof skillet on the stove over medium-high heat and arrange 3/4 of the potato mixture in circles surrounding the entire pan, beginning with the outside and working your way towards the center.
- Sprinkle cheese on top and let the potatoes cook. Do not stir them. Let the potatoes cook on the stove until the cheese melts.
- Add tofu, spinach and onions to another skillet and cook over medium heat until the spinach wilts.
- Pour your tofu mixture on top of the potatoes.
- Arrange the remaining potatoes on top of the tofu.
- Transfer the skillet to the oven and bake for 20 minutes.
*Make sure to slice your potatoes thinly or it will take much longer to cook.
