This is a recipe that can be used for a variety of meals! I use it as a pasta sauce, on burgers, nachos, to dip chips and veggies in, on stir frys and scrambles, and the list goes on and on! I realized that my daughters love making pesto, because they can easily help and taste it along the way. They like to try it out and decide what they think it needs more of based on their little tastebuds. This is a recipe that I encourage you to play around with and figure it out on your own. Don’t worry about precise measurements. You can’t screw it up, I promise!

Ingredients
- 4 cups of mixed greens ( I like to use kale, spinach and arugula mix)
- 1 cup of almonds
- juice of 1 lemon
- 1 cup of olive oil
- 1/2 cup of shredded parmesan
- 2 teaspoons of garlic
- salt + pepper to taste
Cooking Directions
I add all the ingredients to a blender, and first pulse it a few times, and then blend together. I usually start small with portions, and then add a little more here and there based on taste. Start small, because you can always add more! Don’t worry about precision, just try it out! It’s so good!
