I’ve been making nachos a lot lately when I want something filling, fun and easy to make. You can really use any ingredients you have on hand. My recipe tends to change each time I make nachos, depending on what I have in my fridge and pantry. These are always a hit with kids! They sound like a favorite junk food, but if you use the right ingredients, they can be a healthy, balanced meal.

Ingredients
- Tortilla Chips
- Shredded Cheese
- Diced Peppers
- Diced Onions
- Corn
- Black beans or chickpeas
- Diced Plant based nuggets or plant based beef susbsitute
- Vegan Sour Cream
- Vegan Queso
- 1 tablespoon Chili Powder
- 1 tablespoon Paprika
- Salt + Pepper to taste
- Guacamole*, Pesto*, diced avocados, salsa, etc. I have even used BBQ sauce, depending on my mood!
Extras:
*Homemade Guacamole:
- 1 avocado
- juice of 1/2 of lime
- 1 teaspoon of garlic
- 1 teaspoon of chopped cilantro
- handful of chopped onions
- diced tomatoes
- salt + pepper to taste
*Homemade Pesto:
- 4 cups of mixed greens ( I like to use kale, spinach and arugula mix)
- 1 cup of almonds
- juice of 1 lemon
- 1 cup of olive oil
- 1/2 cup of parmesan
- 2 teaspoons of garlic
- salt + pepper to taste
With the homemade pesto, I blend everything together in a blender, adding a little more here and there based on taste. You can start small and always continue to add lemon, garlic, more greens, olive oil, etc, all depending on what you think it need more of! This is a recipe that my daughters like to make so they can taste it along the way and decide with their own tastebuds what the recipe needs more of. Don’t worry about being precise. You can’t screw this up, I promise!

Cooking Directions
- Preheat oven to 350 degrees
- On a greased baking sheet lay out and arrange your chips
- Top with your veggies and or beans, plant based meat, garlic, seasonings and cheese.
- Bake for 20 minutes or until cheese is melted
- Warm up your queso and at the very end top with queso, sour cream, pesto, salsa, whatever toppings sound good to you!
- Be creative!
