I hadn’t made a plant-based version of a Cobb Salad until last night and oh my goodness, I am OBSESSED!! The bacon, chicken, cheese and dressing plant-based substitutes were spot on and so delicious! This is healthy, very filling, colorful and a perfect dish to take to your next Summer cookout!
I have found Vegan substitutes that I absolutely love that y’all must check out if you haven’t yet. The plant-based feta cheese and ranch dressing are so good! I swear, I have tried EVERY Vegan ranch dressing and this is BY FAR my favorite! The plant-based chicken patties and bacon are so delicious and a favorite for my kids too.

Ingredients
- Spinach
- Cherry Tomatoes
- Chicken ( I use Alpha Foods plant-based chicken patties. I buy them at Costco)
- Bacon (I use Sweet Earth plant-based bacon. I buy it at Whole Foods)
- Avocado
- Cucumber
- Feta Cheese ( I use Follow your Heart plant-based feta crumbles. I bought it at Whole Foods )
- Red Onion
- Vegan Ranch Dressing ( my new favorite is “Plant Perfect Ranch.” I bought it at Whole Foods )
Cooking Directions
- Cook chicken patties according to direction in oven
- Cook bacon according to direction on stove
- Dice up your cucumber and avocado.
- Slice up your red onion and cherry tomatoes.
- In a large salad bowl, layer your spinach, cucumbers, tomatoes, avocados, red onion, chicken, bacon and feta crumbles.
- Toss with dressing and enjoy!
