Ingredients
Yellow onion
2 large carrots
4 stems celery
3 cloves garlic
1.5 cups chickpeas
8 cups veggie broth
3 cups fusilli pasta
Cooking Directions
Sautee your onion and garlic over medium heat. Add chopped carrot, celery, broth and chickpeas. Season with thyme and pepper as needed. Bring to a boil and simmer for 20 minutes. Cook your pasta and mix pasta in with the soup. Enjoy!
