I use to eat sushi before I went plant-based, but never really thought about making a plant-based substitute. I found this recipe on instagram from Plant You, and my boyfriend made it for me one day. I was shocked! I could not believe that this was watermelon!! It was so flavorful and tasted nothing like fruit! We have made it before to eat as a side dish, or you can use it as a topping in a poke bowl or salad. The most recent time we made it, we used it in homemade sushi rolls. I can’t wait for you to try this!

Ingredients
- ½ cup soy sauce
- ¼ cup rice vinegar
- 1 tsp red pepper flakes
- 1 tbsp crushed nori
- 1 tsp maple syrup
- 1 tbsp sesame oil
- ½ lime squeezed
- Pinch of salt
- 6-8 cups watermelon cubed
Cooking Directions
1.) Mix the contents of your marinade including the soy sauce, vinegar, red pepper flakes, maple syrup, sesame oil, lime and salt.
2.)Add the ingredients to a freezer bag with the watermelon, and refrigerate for 6 to 8 hours.
3.) Preheat the oven to 400F. Transfer the watermelon to a baking dish, and bake for 1 hour to 1 hour and 20 minutes, checking intermittently until it’s cooked to your liking.
4.)Enjoy with sesame seeds and rice, or in a nourish bowl.
