What’s better than going to the Caribbean? Going to the Caribbean on Christmas Day! When I found out that I wouldn’t have my daughters with me on Christmas Day, I was really sad and emotional. It was going to be my first Christmas morning without my 3 baby girls. I realized that this was now my new normal ( at least for this year ) and I decided to do something I had never done before – travel on Christmas Day. I’ve always dreamed of trading in Christmas trees for palm trees, so it seemed like the perfect year to give it a whirl!
This was the second vacation that I have taken with my boyfriend. The first time we went on vacation was during Fall Break and we went to San Antonio.
We had such a wonderful trip together the first time, that we couldn’t wait to plan our next one! Neither one of us had been on a tropical vacation on Christmas before, so it seemed like the perfect kind of trip to try! We ended up having a beautiful time and made memories together that will last a lifetime.
I highly recommend St. Thomas, but I will warn you – I will not be your best tour guide for this trip that I am recommending you take! If you are looking to sight-see around the island, then you’ve come to the wrong girl. We did absolutely nothing but relax on the beautiful beach.
We stayed at the St. Thomas Wyndham Limetree Beach Resort.
The resort was in a perfect location on a secluded beach on the southern end of the island. We only left our resort one time to go out to dinner off property. The resort had everything we needed! The resort staff was extremely friendly, recommending all sorts of boating, snorkeling and fishing excursions as soon as we checked in. However, we really just wanted to truly relax at the pool and beach and do nothing on this trip. We didn’t have a desire to sight-see or travel around the island. We just wanted to lay out in the sun, swim and eat. The resort is right on the private beach, plus has a beautiful pool and a few restaurants.

We loved having lunch at the Lanai Restaurant at the Limetree Beach Resort. It was nice to sit by the water for an ocean view. We ate multiple lunches and dinners here. They had a great variety of food and lots of vegetarian options.
There was also the Limetree Pool Bar and Market, and they had pool side service, which was really convenient. I am always on the hunt for the best key lime pie, and this comes close to my favorite one at Hugo’s Frog Bar in Chicago.
My favorite dinner of the trip was the one night we decided to leave our resort and eat at the Smoking Rooster. This restaurant was the inspiration for recreating their Chipotle Maple Gazed Tofu Burger recipe.
This was my first Christmas NOT being in Indiana and it was truly a dream come true. If you can ever get away to the Caribbean during the holidays, I promise, you won’t regret it!
